Recently I was asked to enter the Saucy Mama "Fab with Five" blogger recipe contest. Saucy Mama is a company based out of Oregon that makes gourmet marinades, dressings and mustard. I was sent a package with their Santa Fe Creamy Chipotle Dressing, Pacific Rim Ginger Dressing, Sweet Heat Marinade, Dijon Mustard, Apricot-Ginger Mustard, and Tarragon-Lemon Mustard. These ingredients are perfect to spiff up a simple meal. After trying them all, I decided that the Sweet heat Marinade and Santa Fe Creamy Chipotle Dressing were my two favorites so I had to incorporate them both into my recipe.

The rules of this contest were to create a quick and easy recipe using at least one of their products but a maximum of five ingredients not including oil, salt and pepper. The blogger who has the best recipe wins $1,000. This was the perfect contest for me as I love to cook quick and easy meals. As a busy mom that also works part time, I don' always have time to make my own marinades and dressings. The Saucy Mama products can turn a few ingredients into something gourmet and fabulous!
I have been trying to incorporate more fish into my diet so I came up with these salmon sliders. I love making sliders because they are perfect as an appetizer or main course. They are much cuter than regular size burgers. It allows me to eat three rather than one.

Saucy Salmon Sliders With Creamy Chipotle Slaw
6 cups Cole slaw mix
ยฝ cup Saucy Mama Santa Fe Creamy Chipotle Dressing, divided
6 (4 oz) salmon fillets, skin and bones removed or 24 oz of skinless, boneless salmon fillets
3 tablespoons fresh chopped parsley
ยพ cup Saucy Mama Sweet Heat Marinade, divided
4 TBS vegetable oil
12 slider rolls, split (potato or Hawaiian rolls are fine)
Mix together slaw mix and 3 TBS of the chipotle dressing in a medium sized bowl. Reserve remaining dressing. In a food processor with fitted blade, process the salmon to a chunky mixture. Add the parsley and half (6 TBS) of the marinade to the mixture and mix well. Form the salmon mixture into 12 small patties. Heat a large frying pan on medium and add 2 TBS oil to pan. Cook salmon patties six at a time for about 3 minutes on each side or until done. Baste cooked patties with marinade and keep warm. Wipe out the pan if necessary and add oil to the pan for second batch. Cook second batch the same. While sliders are cooking, spread remaining dressing on both sides of rolls. Add a warm patty and a large spoon of slaw to each roll bottom then cover with top roll. Serve with remaining slaw. Make 12 sliders.
