It’s been busy, busy, busy so this post is long overdue. On New Year’s Day I always make pork. This year I made it in the crockpot so my daughter and I could go shopping while the main course cooked itself. I made Crockpot Porchetta but changed around the herbs and seasoning to what I had on hand. I then turned dinner into some fabulous sandwiches that my husband could eat while watching football. These were not neat handheld sandwiches. They were “get your extra napkin, knife and fork and watch the juice drip down your chin” type of sandwiches. Once the pork is cooked, they are pretty easy to make. Below is not actually a recipe but just the way I made them. Feel free to add some sauteed spinach or broccoli rabe and adjust the amounts of ingredients to your liking. They are easy to eat as long as you open wide!

Italian Pork Grinder
4 Italian hoagie rolls
1 to 1 1/2 lbs shredded pork with juice from crockpot
1 jar roasted red peppers
sharp provolone cheese
Split open the rolls and toast lightly. Spoon some juice on each roll then fill with pork and top with peppers and provolone cheese. Broil for a minute or two in the oven so cheese melts. Serve while hot.

It looks so good and is a great way to stretch a pork roast. I actually made a similar sandwich a few days ago, and wish I hand one in my hands right now.
