    My Favorite No Cook Dinner: Antipasto

    Things are as hectic as they can be during dinnertime lately. One child is eating peanut butter and jelly sandwiches at 4:30 after track practice but before karate. The other child is eating a quick bowl of reheated mac and cheese at 5:30 which is before soccer practice and cub scouts. The parents are too busy cabbing kids around to eat so they eat dinner at 9:30.

    If I am going to wait that long, I want something good! So we had the perfect summer meal while watching Grey's Anatomy last night. I am lucky that my local grocery store has a great antipasto bar. I bought some sharp provolone cheese and semolina bread to supplement it with.

    If your grocery store doesn't have an antipasto bar, there are always things you can buy to make a good looking plate. Here are some things I like to load my plates up with:

    imported Italian meats such as salami, prosciutto and rosemary ham
    cheese
    all kinds of olives
    marinated artichokes
    roasted peppers
    stuffed grape leaves
    hard boiled eggs
    marinated mushrooms
    provolone and prosciutto stuffed peppers

      yumm, for me, cheeses, smokey, pungent and salty, marinated olives, peppers, crisp apples, dried apricots, little chunks of good rustic bread and cherry tomatoes.

      I love making antipasto at home from the veggies i ahev at home.
      i like to make alot and keeping eating .. or adding to any salad or sandwich

      We have antipasto night every Friday night on the patio, weather permitting. I look fwd to it all week!

      Our schedule is nearly as crazy as yours right now! May have to borrow your idea so that we can have something later that's yummy and not too heavy.
