Here in NJ, we had the snow storm of the decade this past weekend. So what do you do when you're housebound for two days because of 2 feet of snow? You stay in your pajamas, cook, bake, eat, watch football and watch movies. Not so good for the behind though. But then you shovel lots of snow the next day to burn it all off.
I baked lots and lots of cookies and made soup. Now I won't call this soup diet food, but it does have broccoli, light cheese and fat free evaporated milk. I really couldn't tell the difference from the full fat version. But I guess it doesn't matter when you eat half your weight in cookies in the same day, right?
Anyway, if mother nature sends two feet of snow your way, make soup!
Lightened Broccoli Cheese Soup
2 TBS butter
3 TBS flour
3 cups chicken broth
2 cups frozen broccoli, defrosted and chopped
½ teaspoon onion powder
½ teaspoon garlic powder
1 can fat free evaporated milk
1 cup shredded low fat cheese
salt and pepper to taste
In a medium pot, melt the butter on medium heat and add flour. Stir until the mixture becomes a paste and add broth. Bring to a simmer and whisk until smooth. Add broccoli, onion powder and garlic powder. With hand blender, puree mixture. Add milk and cheese and cook on low heat until mixture is smooth and starts to simmer. Add salt and pepper to taste. Makes 4 to 6 servings.

Way to lighten up the soup!
At my brother's house a couple holidays ago, my SIL made the most fattening broccoli cheese soup I've ever seen (I watched her make it). I was on Biggest Loser online diet at the time. I vowed to go home and make a much lighter version and I did. I'd have to hunt for the recipe. Or just try yours. Love the idea of evap. milk and I always keep some in stock and only buy the fat free kind.
