Smoky Shrimp and Spinach Quesadillas

My Olympic watching has really cut into some of my sleeping time. However, it doesn’t effect my meal time. I have been making sure that I can make some really quick dinners so we can be cleaned up and ready to watch the minute they come on.

The other night we watched and ate at the same time. I made an appetizer type dinner. These shrimp quesadillas are perfect as an appetizer or paired with a salad for a full meal. The smokiness comes from the cheese and the chipotle powder mixed in the sour cream. They are also perfect for a fall football viewing party. (Only a few more weeks away!) Enjoy!

Smoky Shrimp and Spinach Quesadillas

1/2 cup sour cream
1 lime, cut in half
1/4 tsp chipotle powder
salt (to taste)
2 TBS olive oil, plus extra for greasing the griddle
2 cloves crushed garlic
6 ounce bag baby spinach, chopped
½ cup frozen or fresh corn
12 oz cleaned, deveined shrimp(medium size)
1 TBS chili powder
1 cup shredded Mexican blend cheese
1 cup shredded smoked Gouda cheese
6 flour tortillas (6 to 7 inch size)

Mix sour cream, juice from half the lime and chipotle powder together in a medium size bowl. Add salt to taste. Refrigerate until ready to use.

Heat 2 TBS oil in a large fry pan over medium high heat. Saute garlic, spinach and corn for a few minutes or until spinach is wilted. Add shrimp and chili powder. Squeeze with the juice from the remaining lime half. Reduce heat to medium and cook for about 4 to 5 minutes or until shrimp turn pink, stirring occasionally.

Mix the cheese together in a bowl. Heat a griddle or large skillet over medium high heat and coat with olive oil. Lay 3 tortillas on the griddle. (Depending on how big your griddle is, you can do a few at a time.) Spoon 1/3 of the shrimp mixture on each tortilla. Cover with 1/3 of the cheese mixture. Top with another tortilla. Cook for a minute or two and flip with a spatula. Press down a bit and continue to cook until cheese is melted and tortillas start to turn golden. Repeat process with remaining tortillas. Cut each quesadilla into 6 triangles. Serve with the sour cream mixture. Makes 6 appetizer portions or 3 quesadillas.

What a great quesadilla recipe! Don’t you just love the outside crunch combined with the inside creamy? I like how you made the dippng sauce smokey, and with the inclusion of gouda in the filling … well you know I of course would like that!

Yum, Lisa! Last time I made shrimp quesadillas I was watching Brett Favre & the Packers….yours look so good tho', I might have to make them again before football season. 😉

Doesn’t sport watching make you extra hungry? It motivates me to exercise more but I feel like Winnie the Pooh-I improve my appetite when I exercise. These look AMAZING!
