    Oysters Saltimbocca

    Today I am presenting you with an appetizer to serve at your next outdoor party. We will be going to the shore next week and I am in that seafood mode. To indulge myself in a little shameless self promotion, let me tell you that this recipe won the National Oyster cook off in Maryland last year. It is extremely simple to make and has great flavors. Even if you are not a big oyster fan, you might still like these.
     

     

    By the way, the National Oyster Festival is taking entries for the cook off in October. If you live within driving distance, it is definitely worth trying to get into. Contestants come from all over the country. The festival is a lot of fun and my whole family enjoyed it last year. If you make it as a finalist, they put you up in a hotel for 2 nights and have a really nice dinner for the contestants. The people that run the festival are so hospitable and nice. So get your entries in by August 1st for a fun filled weekend away and the opportunity to win some prize money. Just click here for the rules.
     

     

    Speaking of contests, I have some deadlines looming. Between now and the beginning of August, I will be working on a few things. So don't hold it against me if my posts are scarce. Between contests and vacation, I might be a little MIA. But I'll be back with some Jersey fresh recipes showcasing garden state produce.
     

     

     

    Oysters Saltimbocca with Lemon Butter and Sage Sauce

    1 dozen oysters
    Rock salt
    2 tablespoons olive oil
    3 thin slices prosciutto (1 to 2 ounces), chopped
    1 clove garlic, crushed
    2 tablespoons fresh sage, chopped
    8 round buttery crackers, finely crushed
    2 tablespoons white wine
    1 tablespoon lemon juice
    ยฝ tablespoon lemon zest
    2 tablespoons grated Parmesan cheese
    black pepper to taste

    Sauce:
    ยผ cup butter
    juice of 1 small lemon or half a large lemon
    1 TBS fresh chopped sage
    dash of Tabasco sauce
    black pepper to taste

    Garnish:
    fresh lemon slices
    sage leaves

    Preheat oven to 450 degrees. Scrub the oysters with cold water. Shuck the oysters, keeping the oyster meat in the deep part of the shell. Arrange the oysters in a baking dish on a bed of rock salt. Heat the oil in a non-stick skillet over medium heat. Add the prosciutto, garlic and sage. Cook for one to three minutes or until prosciutto is slightly crisp; stirring often. Place the prosciutto mixture, cracker crumbs, wine, lemon juice, zest and cheese in a small bowl. Add pepper to taste and mix well. Top each oyster with some prosciutto mixture. Bake for 5 to 7 minutes or until edges of oysters begin to curl. To make sauce, melt butter in a small pan. Add lemon juice, sage, Tabasco and pepper to taste. Serve the oysters with the sauce and garnish with lemon slices and sage if desired.

      Wow your oysters sound so delicious. I have never heard of cooking them this way before. I haven't had them in a long time, but when I was a kid my parents used to deep fry them in a light batter and I loved them!

      I love the idea of topping them with the crispy proscuitto, garlic and sage.

      Just like Lori I don't get to eat them as often as I'd like. Love the way you cooked them for this Saltimbocca! That sauce sounds yummy too, perfect to complete the flavours from the oysters.

      Those oysters look amazing. I never thought of prosciutto in oysters before. That sounds great. Oh and how I miss the Jersey Shore (stuck as I am on another shore on the other side of the country-- they don't know how to do boardwalks here).
