- 8 slices bacon
- 4 6 ounce burger patties
- 4 slices cheddar or colby jack cheese
- 4 potato buns
- 1 avocado, peeled, pitted and sliced
- 4 eggs
- salt and pepper, to taste
- ketchup for serving
Cook bacon in a cast iron pan on medium heat for 10 minutes or until crispy. Drain extra grease and set bacon aside on paper towels.
Cook the burger patties on medium high, about 4 to 5 minutes on each side or until they are just slightly pink in the middle. Before they’re finished cooking, add the slices of cheese to the top so that it melts.
Place the sliced avocado and bacon on the bun bottoms, then top with cheeseburgers. Keep warm on a plate.
Fry the four eggs in the pan for about 3 to 4 minutes or until whites are set. Season with salt and pepper to taste and top each cheeseburger with an egg. Top with bun. Serve with ketchup and salt and pepper to taste.
