Ingredients
1TBSolive oil
3ouncesthin sliced prosciuttochopped
1bag The Better Chip2 ounces, Beet flavor
1bag The Better Chip2 ounces, Spinach and Kale flavor
½cupricotta cheese
chopped Italian olives
chopped tomatoes
fresh chopped basil
shredded Italian cheese such as ParmesanAsiago or Provolone
Instructions
In a medium sized frying pan, heat oil to medium heat. Add prosciutto and cook for 3 to 5 minutes or until prosciutto is crisp. Set aside on a plate lined with a paper towel.
Spread the chips out onto a large platter.
Spread each chip with a little ricotta cheese.
Top with olives, tomatoes, basil. Drizzle some of the balsamic glaze on the chips.
Sprinkle with Italian cheese and reserved prosciutto.
Serve and enjoy.
Notes
Any Italian ingredients can be subtracted or added. Other items such as chopped roasted peppers or artichokes, or salami works too.
