Sauteed Zucchini and Tomatoes

Zucchini and tomatoes are pan fried together for a delicious side dish. This quick stewed zuchinni recipes goes with all types of proteins and is also great next to pasta or rice.

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic about 3 cloves
  • 2 medium zucchini, sliced
  • 1 teaspoon Italian seasoning
  • 1 cup chopped tomatoes
  • salt and pepper, to taste

Instructions

  • In a large skillet over medium-high heat, heat olive oil. Add garlic and zucchini to the pan. Sprinkle with Italian seasonings and cook for 5 minutes..
  • Stir in the tomatoes and cook for another 5 minutes. Stir then cook longer until veggies are of desired tenderness. Season with salt and pepper before serving.

Notes

Serve as a side dish with poultry, meat or fish but also great as a topping over pasta or rice.
