- 2 Cups Fresh Basil
- ½ Cup Olive Oil
- ¼ Cup Toasted Pine Nuts
- ¼ Cup Freshly Grated Parmesan
- 1 Tablespoon Minced Garlic
- ¼ Teaspoon Salt
- ⅛ Teaspoon Pepper
Wash and remove the stems from your fresh basil.
Place all ingredients in a food processor, and blend until smooth.
Store in an airtight container, in the fridge, for up to 1 week.
You can adjust flavors and consistency of the mixture, by adjusting the amounts of the oil or other ingredients, based on preferences.
You can buy already roasted pine nuts but if they are raw, put them in a skillet on medium low heat over the stove. Move the pine nuts around, allowing them to toast, for about 10 minutes making sure not to burn them. The heat will darken their color a bit.
Almonds and walnuts can be used in place of pinenuts for a bit of a different flavor.
This makes one cup of pesto which is equal to about 16 tablespoons.
