Chicken Caesar Salad Wraps
Tender chicken, crisp lettuce, and a creamy Caesar dressing is wrapped in a soft tortilla which is perfect for lunch or a light dinner.

- 2 cups cooked chicken breast
- ⅓ cup Caesar dressing store bought or homemade
- ½ cup shredded or grated Parmesan cheese
- 1 cup romaine lettuce leaves
- 4 large tortillas
- 1 small pickling cucumber thinly sliced
- ¼ cup croutons slightly crushed
- ground black pepper to taste
Shred or chop a large cooked chicken breast. You can also use pre-cooked rotisserie chicken to save time.
In a large mixing bowl, combine the shredded chicken, dressing and cheese. Mix together until all the chicken is coated. Be careful not to overdress the chicken as you can always add more dressing later.
Lay the tortillas flat on a clean surface. If you prefer warm tortillas, you can briefly heat them in a microwave for about 10-15 seconds. Pile the lettuce, cucumber slices and chicken mixture on each tortilla. Sprinkle with croutons and black pepper.
Fold in the sides of the tortilla,then roll it up tightly from the bottom to enclose the filling. Slice the wrap in half if you like or serve it whole.
Warm tortillas to make them more pliable to work with.
Swap the chicken for shrimp or chickpeas for a seafood or vegetarian version.
Add crispy chopped bacon for more flavor an crunch.
