Air Fryer Parmesan Zucchini

Air fryer zucchini topped with Parmesan cheese is a simple and delicious low carb side dish that's roasted in the air fryer in 10 minutes.

Ingredients

  • 16 ounces zucchini (2 -3 medium to large)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon garlic powder
  • ½ cup grated Parmesan cheese

Instructions

  • Clean and slice zucchini then put in a large bowl. Toss with olive oil.
  • In a small bowl, mix together salt, pepper, garlic powder and cheese. Sprinkle on zucchini an dmix well.
  • Preheat air fryer to 400 degrees if necessary. Spray racks with cooking spray and spread zucchini in a single layer.
  • Cook for 10 minutes or until zucchini is at desired doneness.
  • Cook in several batches if necessary. Cool zuchinni before serving.

Notes

No air fryer? No problem. Follow prep instructions then line a roasting pan with parchment paper. Roast in a 425 degree preheated oven for about 15 minutes or until desired doneness.
