Cook diced peaches, brown sugar, and the water/corn starch mixture on medium-high heat and stir frequently for about 10 minutes.
When the mixture thickens and becomes bubbly, remove it from the heat and add the vanilla extract.
Add 1-2 heaping tablespoons of the peach mixture into the center of an egg roll wrapper. Wet the edges of the wrapper, fold in the sides and roll, completely sealing the wrapper.
Heat vegetable oil on medium heat, then fry the peach egg rolls for 3-4 mins on each side until crispy.
Drain on paper towels, then toss the egg rolls in the melted butter and cinnamon-sugar mixture.
