Because you can never have enough summer produce recipes!
Ahhh, it's midsummer and I am enjoying all the fresh produce NJ has to offer. I really like belonging to Fernbrook Farms CSA. I have been getting produce that I probably normally wouldn't buy and it is forcing me to try new vegetables that normally wouldn't be on my menu. I also have a garden which has a plentiful bounty of tomatoes, cucumbers, peppers and fresh herbs including parsley and basil. Peaches have arrived at many roadside stands and corn is right around the corner. I have to say I'm in produce glory.
All these wonderful vegetables have been causing me to cook a lot. The good thing is produce is so healthy. So even though I'm indulging in various summer cocktails, ice cream and local restaurants, I'm feeling pretty good about the nutritious recipes I've also been making.

I can't get enough of the beets my CSA farm has. I've been roasting a batch of beets weekly. They are so good.
