    Arugula Salad with Toasted Walnuts, Champagne Vinaigrette and Shaved Cheese

    This salad sounds kind of fancy, doesn't it? Actually, it's so easy to put together that we have eaten it at dinner for the last three nights. It is definitely a company worthy salad and I am not sure I'd call this a recipe. It's just an idea. I love this delicious low fat champagne dressing from Trader Joe's. You can toast the walnuts in advance and you don't even have to grate your own cheese. Trader Joe's has containers of shaved Parmesan, Romano and Asiago right in their cheese section. If you don't have a Trader Joe's near your home, you can always make your own dressing or get another brand. Many champagne dressings are sold in the gourmet section of the grocery store. Most grocery stores today carry so many great items. You can also use any type of hard Italian cheese. I am not including measurements because you can easily eyeball this salad. Besides, sometimes you feel like a lot of walnuts and sometimes you don't. Enjoy the rest of your weekend!


    Arugula Salad with Toasted Walnuts, Champagne Vinaigrette and Shaved Italian Cheese
    arugula salad
    Champagne Vinaigrette dressing
    toasted walnuts
    shaved Parmesan or Romano cheese (or the Trader Joe's Blend)

    Toss the salad with the dressing. Put on individual plates and sprinkle with walnuts and cheese.

      I love that shaved parm - we have it in our fridge right now. I've seen that vinaigrette a couple times in the store, but haven't picked it up.

      Sounds yummy Lisa! We had salad tonight for dinner - we have been exercising right after work so we get home too late to really have a full course meal, so it has been salad or a really low calorie recipe.
