There have been many banana bread recipes on blogs recently , partially due to NQN's Banana Bread Bakeoff Event. Last night I made my entry.
I used the last few bananas I had in my freezer . I also decided to use up a lonely old apple sitting in my fridge. I sauteed the apples in butter and brown sugar and added them to the batter at the end. I pureed the bananas and this made the bread very sweet and moist. After a taste, I wrapped it up so hubby could take the banana bread to work this morning. He said it disappeared in minutes. My husband just started working in a new office and food is very welcome there. This makes me happy as I love to bake but I really don't like a lot of baked goods sitting around my house. I hope they will not mind eating some of my experiments as there are a slew of recipe contests which I will be entering.
This banana bread is even better the day after it is baked. The first bite of apple reminded me of a moist Jewish apple cake. By the way, sorry about the pictures. I think I need to clean the lens on my camera and improve my photo posting ability.

Brown Sugar Apple Banana Bread
1 ยผ cups flour
1 teaspoon baking soda
ยฝ teaspoon salt
ยฝ cup softened butter, divided
1 cup chopped apple (about 1 apple)
ยผ cup light brown sugar
ยพ cup sugar
2 large eggs
1 teaspoon vanilla
4 large bananas, pureed
Preheat oven to 350 degrees. Mix the flour, baking soda and salt in a small bowl. Set aside. Grease a 9x5x3 inch loaf pan or spray with cooking spray. In a small sauce pan, melt two tablespoons butter and saute apples for a few minutes or until fruit begins to soften. Add brown sugar; stir and remove from heat. Cream the remaining butter and sugar until fluffy. Incorporate the vanilla and eggs into the butter. Add the bananas and mix well. (The mixture will appear to be curdled but this is fine.) Add the flour mixture to the banana mixture and stir lightly. Fold the apples into the batter. Bake for 45 to 55 minutes or until toothpick in the center comes out clean. Cool the bread for 10 minutes before turning out of pan.

This sounds delicious!! I wish my hubby had an office that I could send treats to. He works out of the house! So I end up sending them to the teacher's lounge at my son's school instead ๐
I made a banana bread for this event too- so I suppose I should post about that sometime this week!

And I know exactly what you mean about baking for enjoyment and wanting to get rid of it all after you bake- I just seem to get rid of half only though. ๐
