This holiday season I made a promise to myself. I am going to relax and enjoy every minute I can without being stressed out. Okay, that might be tough. But if I can hold my promise for 75% of the time, I will be satisfied. Our sports schedule is a little lighter for the month of December and the kids have quite a few days off. So I am going to plan fun holiday things like going to the movies, seeing the holiday light show in Philadelphia, doing some shopping and enjoying Christmas parties.
While we won't be rushing off to sports and other activities every night, we still will be busy. I don't plan to cook elaborate meals on week nights but I still want a nice dinner. Again, it's Sun-Bird seasonings to the rescue. Last night I made this quick Mongolian chicken with lots of healthy vegetables. Pair it with a whole grain rice medley and dinner was on the table in less than 30 minutes. We still had time to spend a few hours shopping.
Mongolian Chicken Stir Fry
Sun-Bird Mongolian Beef seasoning packet
¼ cup low sodium soy sauce
2 TBS water
2 TBS canola oil
1 lb chicken breast, cut into bite size pieces
1 teaspoon chopped garlic
1 medium sized zucchini, trimmed and sliced
1-12 oz package frozen veggies (I used a carrot and green bean mix)
In a small bowl, mix together seasoning, soy sauce and water. Heat oil in a large skillet over medium high heat. Add chicken and garlic and cook until chicken is no longer pink. Add zucchini and veggies to pan. Cook for another few minutes or until veggies start to cook. Add sauce mix and continue to cook until veggies are done and sauce is thickened. Serve with rice if desired.
