    Cherry Blondies

    Believe it or not, I am not a chocolate person. I would much rather have a dessert filled with fruit and whipped cream. Give me strawberry short cake or key lime pie and I will skip the brownies every time.

    My son is the chocolate person in this house and he constantly begs for me to make him brownies. My hubby and daughter are not big chocolate fans either. So my son gets his share of brownies when I bake them. But sorry buddy, today this dessert is for the rest of the family. Instead of chocolate brownies, I decided to go with blondies instead. I had a bag of cherries which I wanted to use up so I thought they would be the perfect complement to these sweet buttery squares.

    The blondes are on the thinner side because I used a nine inch pan. Next time I would use an eight inch pan to make them just a tad thicker. Next time might be tomorrow because half of them are gone already!

    Cherry Blondies

    A sweet buttery baked treat using fresh cherries.
    Servings: 9

    Ingredients

    • ½ cup butter melted
    • ¾ cup light brown sugar packed
    • 1 large egg beaten
    • 1 teaspoon vanilla
    • 1 cup flour
    • 1 teaspoon baking powder
    • ¼ teaspoon salt
    • ½ cup pitted cherries chopped

    Instructions

    • Preheat the oven to 350 degrees. Grease an 8 by 8 baking pan.
    • In a bowl, stir together the butter and brown sugar. Add the egg and vanilla. Whisk until smooth.
    • In a small bowl, mix together the flour, baking powder and salt. Add to the butter and sugar mixture. Fold in the cherries.
    • Pour the batter into the pan and spread evenly. Bake for 20 to 25 minutes or until top is golden and toothpick comes out clean.
    • Cool for 20 minutes before cutting into 9 squares.

      Perfect...I have a bag of cherries in the fridge! I'm a chocolate fan, but I can't object to something that looks this good. 🙂

      You are just like my boyfriend - I'm not sure how anyone doesn't LOVE chocolate but then looking at these blondies - I could just stick with these, too! Delicious and cherries are on sale this week. We will have to try them 🙂

      I used dark brown sugar instead of light brown sugar and they turned out very nicely. Thank you for the recipe!
