Tomorrow is International Waffle Day! What does that mean? Well everyone should make sure they eat some waffles. This day started in Sweden and I think we should all celebrate. My son is my number one waffle fan so homemade waffles will be on the menu in our house. He has a soccer game in the morning so going out to brunch will not be happening. Instead I'll whip up one of the recipes below before he leaves for his game. Or he might just eat a frozen waffle...lol.
If we were going out to breakfast, I'd want these chicken and waffles that I had at The Grand Lux Cafe a few weeks ago. They were so delish. The Grand Lux Cafe serves brunch on both Saturdays and Sundays. The chicken and waffles are one of their most popular brunch items. It is a light fluffy Belgian waffle topped with crispy fried chicken strips and pecans served with a Maple butter sauce. It is so good and a very big portion. I ate half for brunch and happily ate the other half for dinner that night.
I recommend sleeping late then going to get waffles at The Grande Lux Cafe to celebrate this holiday. Maybe get a mimosa? Their coffee is great too.
I know everyone does not have the luxury to sleep late and go out to brunch on a Saturday morning. But you can still make waffles on International Waffle Day or any other morning. Oh my, I am in heaven here! I absolutely love waffles. We have them way more often for supper than any other time of the day. We aren't big breakfast people, but who can resist having waffles for supper? You've got some really good ones to choose from here too!
