    An Eggscellent Croissaint Sandwich

    This is going to be a quick post as Busch Garden's has me exhausted and I am looking forward to my nice fluffy bed. We are going out to breakfast tomorrow morning so I have breakfast on my mind. I just finished a vanilla shake and you think I wouldn't be thinking about what I will be eating next. But that's just me. Last week, I made this great breakfast sandwich. I purchased some whole wheat croissants from my grocery store. They were outstanding. I thought I'd add some avocados and skip the bacon to make this healthy breakfast sandwich.

    California Breakfast Sandwich

    2 teaspoon canola oil
    1 green onion, chopped
    3 eggs, beaten
    ¾ cup shredded smoked Gouda(I used the low fat type)
    ½ avocado, pitted and sliced
    2 whole wheat croissants, sliced and toasted
    ½ avocado, pitted and sliced
    dash hot sauce
    In a small pan, heat oil and saute onions for a minute or two. Add eggs and cook on low while gently scrambling until done. Top with cheese and put lid on pan for a few minutes or until cheese is melted. Top croissants with avocado slices , then add eggs and a dash of hot sauce.

      Wholewheat Croissants are really hard to come by in the UK - at least in Cornwall! Looks like a delish breakfast. Glad you're enjoying yourselves - you'll need another holiday to get over this one by the sounds of it!!

      Since you are in the Williamsburg area there is a great family restaurant in Lightfoot not that far north from where you are. It is called Welcome South. You might want to try it. I've been going there years and the food has never disappointed. Have a great vacation!

      Lisa that is right up my alley. I love that type of sandwich. I need to start baking with whole wheat flour soon.

      Croissants make the best breakfast sandwiches ever 🙂 I really dig the avocado in there, it must add a nice creaminess.

      I have never heard of nor seen whole wheat croissaints. YUM! I'm sure they're butter free, too, right! 🙂

      That sandwich looks like something I would totally love! I love the whole wheat croissaint. I've never seen them in whole wheat. The avocado was a great alternative to the bacon!

      That's a lovely sandwich. For some reason, I can't whip up these creative combinations others seem to think up in their sleep. I start with cheese, and then I draw a blank. Odd, isn't it?

      I use to travel to Williamsburg a lot for work and always had a blast. Sadly though I never could ever cook but instead was stuck eating out in restaurant after restaurant.

      The sandwich looks amazing and a lot better than this bowl of cereal I am sitting here eating right now that well tastes like cardboard.

      Where in the world do you find whole wheat croissants? Maybe you shouldn't tell me as I would HAVE to go and buy them so I could make this!
