    Banana Chocolate Chip Muffins

    There are so many good recipes in Tate's Bake Shop cookbook that I had a hard time picking which to make. Luckily the holidays are right around the corner so I will be making many more. I decided on the banana chocolate chip muffins and I have to say these were the best banana muffins I have ever baked. They came out high, moist and light with the perfect amount of chocolate chips. I made a dozen and had a group of nine year old boys over my house. The muffins disappeared very quickly!

    The recipe calls for a topping of turbinado sugar but I didn't have any so I decided to leave that out. I also baked them in muffin cups so that they were more portable for smaller hands. This recipe is one of my new "go to" muffin recipes.

    Banana Chocolate Chip Muffins (from Tate's Bake Shop Cookbook)
    2 cups all purpose flour
    2 teaspoon baking powder
    ½ teaspoon baking soda
    ½ teaspoon salt
    ½ cup salted butter
    ½ cup light brown sugar
    ¼ cup sugar
    1 teaspoon vanilla
    2 large eggs
    1 ½ cups mashed banana
    ½ cup sour cream
    1 cup chocolate chips
    2 TBS turbinado sugar

    Preheat oven to 400 degrees. Grease or line a twelve cup muffin tin. Mix the flour, baking powder, baking soda, and salt together in a medium bowl. Cream the butter and two sugars together until light and fluffy. Add the vanilla and eggs until well blended. Mix in the bananas and sour cream. Fold in the flour mixture then stir in the chocolate chips. Spoon the mixture into the muffin cups. They will be filled to the top. Sprinkle the turbinado sugar over them. Bake for 20 minutes or until toothpick inserted into muffin comes out clean and muffins are golden brown.

      When I opened my freezer yesterday, I noticed that I have a bag of frozen bananas and thought I better make something out of those to make room in the freezer for the holidays - now I know what I am going to make! They look and sound delicious and you can't go wrong with adding chocolate chips!
