Salad for Lunch

by jerseygirl on June 9, 2009 · 39 comments

I am not an Italian chain restaurant fan however I will go to the Olive Garden for lunch so I can order their salad and breadsticks. I decided I wanted to try making the dressing myself and I searched the internet for some copycat recipes. This is what I came up with. It didn’t taste exact however it was a pretty good imitation. So today I made a salad with lettuce, pepperoncini, tomatoes, roasted peppers and some ham and cheese spirals. It was the perfect lunch. I will be making the dressing again but maybe tweeking it a little next time.

Don’t forget about my Spoonful of Stories Giveaway. You have until Thursday for a chance to win. Have a great day!

Copy Cat Olive Garden Dressing

1/2 cup light mayonnaise
1/3 cup white vinegar
1 tsp vegetable oil
2 Tbls. corn syrup
2 Tbls. Parmesan cheese
2 Tbls. Romano cheese
1/4 tsp. garlic salt
1/2 tsp. Italian seasoning
1/2 tsp. parsley flakes
1 Tbl. lemon juice

Mix all ingredients in a blender or processor until well blended. If this is a little too tart for your personal taste, please add a little sugar.

Yum! I recently saw this "copycat" that looks great!
These gals have a really cute blog with lots of yummy looking recipes.

I didn't take the time to compare your recipes. They may be similar. Probably my favorite thing at OG is their salad.

I'll bet this is a wonderful dressing for salads. It must be great to know you can get close to the flavors you like so much. Have a wonderful day, Lisa.

Chef Fresco June 9, 2009 at 7:32 pm

Good for you! Probably more healthy than theirs too!

Now you've got me craving Olive Garden – haven't been there in ages. The current issue of Food Network magazine has their copycat version of the salad dressing and breadsticks – thought you might be interested.

I really like the Olive Garden dressing..I'll have to give the copycat recipe a try…I didn't realize it had mayo in it!

Adam June 11, 2009 at 8:57 am

I'm not a huge Garden fan either, but sometimes I have to appreciate a good soup and salad. Nice job on the copying, I think that would work really well 🙂

I do like their dressing and have copied it too! They have a good thing going if we all want their recipe! Summer time here means more salads for dinner and lunch.

Your salad looks better than OG's because it has more stuff in it. Yum! The dressing sounds delicious.

My kids love Olive Garden and I am sure they will love this recipe too.

My daily lunch is usually a salad of some sort. Anything else requires an afternoon nap for me.

Clumbsy Cookie June 14, 2009 at 5:19 pm

I have a lot of salads for lunch and this one looks delicious! The dressing looks great as is. I usually just eat mine with olive oil, salt and balsamic vinegar, but I would really try the dressing!

Annie June 14, 2009 at 10:57 pm

I'm totally loving this post.. I love the salad and bread sticks there too.

I haven't been there in a while and now I can make it myself thanks to you 🙂

It is often fun to try to recreate things that you have had elsewhere.

Culinary Cory June 20, 2009 at 11:44 pm

I'm not an Olive Garden fan either. But I have to admit, I'm a sucker for the salad and breadsticks for lunch.
