Southwest Corn Slaw
This fresh and creamy Southwest corn slaw is a quick, flavorful side dish that pairs perfectly with tacos, grilled meats and more.

shredded green cabbage

shredded red cabbage

corn kernels
fresh, frozen, or canned

cooked black beans

shredded carrot

chopped cilantro

mayonnaise

tablespoon
lime juice

tablespoon
olive oil

ground cumin
Salt and pepper
to taste
Instructions
In a large bowl, combine green cabbage, red cabbage, corn, black beans, carrot and cilantro.
In a small bowl, whisk together mayonnaise, lime juice, olive oil, cumin, salt and pepper.
Pour the dressing over the salad and toss to coat evenly. Serve immediately or chill for 15–30 minutes for better flavor
