Southwest Corn Slaw

This fresh and creamy Southwest corn slaw is a quick, flavorful side dish that pairs perfectly with tacos, grilled meats and more.

Ingredients

  • 1 cup shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 cup corn kernels fresh, frozen, or canned
  • ¾ cup cooked black beans
  • ½ cup shredded carrot
  • ¼ cup chopped cilantro
  • 2 tablespoon mayonnaise
  • 2 tablespoon lime juice
  • 1 tablespoon olive oil
  • ½ teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine green cabbage, red cabbage, corn, black beans, carrot and cilantro.
  • In a small bowl, whisk together mayonnaise, lime juice, olive oil, cumin, salt and pepper.
  • Pour the dressing over the salad and toss to coat evenly. Serve immediately or chill for 15–30 minutes for better flavor
