Simple Orzo Rice Pilaf

Ingredients

  • 3 Tablespoons olive oil
  • ½ cup yellow onion diced
  • 1 cup long grain white rice
  • ½ cup orzo
  • 1 teaspoon minced garlic
  • 1 teaspoon better than bouillon chicken
  • 3 cups water
  • 2 teaspoons salt
  • ½ teaspoon pepper
  • 2 Tablespoons fresh chopped parsley (optional) for servinge

Instructions

  • In a large frying pan, heat the olive oil over medium heat and saute the onions until softened, about 5 minutes.
  • Add in the rice and the orzo and stir constantly while it heats up for about 2 minutes. Stir in the garlic and mix constantly for another 30 seconds or until fragrant.
  • Add in the better than bouillon, water, salt and pepper. Stir to combine.
  • Continue to cook over medium low heat until the water is absorbed and the rice is cooked, about 20 minutes.
  • Garnish with parsley before serving, if desired.

Notes

Storage: Pilaf can be stored in an airtight container in the fridge for up to 2 days.
