Simple Orzo Rice Pilaf

- 3 Tablespoons olive oil
- ½ cup yellow onion diced
- 1 cup long grain white rice
- ½ cup orzo
- 1 teaspoon minced garlic
- 1 teaspoon better than bouillon chicken
- 3 cups water
- 2 teaspoons salt
- ½ teaspoon pepper
- 2 Tablespoons fresh chopped parsley (optional) for servinge
In a large frying pan, heat the olive oil over medium heat and saute the onions until softened, about 5 minutes.
Add in the rice and the orzo and stir constantly while it heats up for about 2 minutes. Stir in the garlic and mix constantly for another 30 seconds or until fragrant.
Add in the better than bouillon, water, salt and pepper. Stir to combine.
Continue to cook over medium low heat until the water is absorbed and the rice is cooked, about 20 minutes.
Garnish with parsley before serving, if desired.
Storage: Pilaf can be stored in an airtight container in the fridge for up to 2 days.
