For the Salad
- 1 lb whole brussel sprouts shredded or Finely chopped
- ¼ cup red onion chopped
- 4 slices pre- cooked bacon chopped
- ⅓ cup candied pecans
- ⅓ cup dried cranberries
- 1 honey crisp apple chopped
For The Maple Vinaigrette Dressing
- ⅓ cup maple syrup
- ¼ cup Olive Oil extra virgin
- 1 lemon juiced
- 1 teaspoon salt
- 1 teaspoon black pepper
Place brussel sprouts in a food processor and shred.
Add shredded brussel sprouts, red onion, bacon, pecans, cranberries, and apples to a large bowl.
In a mason jar add all of the vinaigrette ingredients. Secure with a lid and shake well until combined.
Toss salad with then dressing when ready to serve. Enjoy!
If you dont have a food processor, fine chop the brussel sprouts on a cutting board with a knife.
Sub turkey bacon, pancetta or Canadian bacon for the bacon.
Top with a protein like chicken or shrimp for a complete meal.
