Roasted Bok Choy
Roasted bok choy is a quick, flavorful side dish with crispy edges and tender stems, finished with a savory sesame glaze.

- 1 pound baby bok choy
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 1 tablespoon toasted sesame oil
- 1 tablespoon soy sauce
- 2 teaspoons honey
- Salt and black pepper to taste
- 1 teaspoon sesame seeds optional
Preheat oven to 400°F. Wash the bok choy well and make sure to remove all dirt near the base of the vegetable.
In a small bowl, mix together the garlic powder, onion powder, sesame oil, soy sauce and honey.
Arrange the bok choy on a baking sheet. Cover with a sheet of parchment paper for quick clean up. Drizzle the sauce over the bok choy and toss gently.
Roast for 12 to 15 minutes or until the edges are crispy and the bok choy stems are tender. Season with salt and pepper to taste. Sprinkle on the sesame seeds before serving.
Tips:
Baby bok choy cooks faster and tends to be more tender.
For extra caramelization, broil for 1–2 minutes at the end.
Dry the bok choy well after washing. Wet vegetables don't roast well.
Variations:
Add some hot pepper flakes for a spicy finish.
Add fresh minced garlic for a stronger flavor.
Fresh grated ginger can be added for a bright fresh flavor.
