Leftover Turkey Salad with Grapes

Leftover turkey salad with grapes is a refreshing, flavorful dish that turns leftover turkey into a light, satisfying meal.

Ingredients

  • 3 cups leftover chopped turkey
  • 1 ½ cups red or green seedless grapes cut in half
  • ¼ cup chopped pecans
  • 2 medium stalks of celery chopped
  • ¼ cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon curry powder
  • salt and pepper to taste

Instructions

  • In a large bowl, mix toegether chopped turkey, grapes, pecans, chopped celery, mayonnaise, lemon juice and curry powder. Mix well then season to taste with salt and pepper.

Notes

This is a great use for leftover holiday turkey. Serve on bread for a sandwich, with cracksers or on top of a bed of lettuce. You can also substitute leftover chicken for the turkey. 
If you do not like curry powder, feel free to leave it out or substitute a milder spice like sweet paprika.
