Leftover Turkey Salad with Grapes
Leftover turkey salad with grapes is a refreshing, flavorful dish that turns leftover turkey into a light, satisfying meal.

- 3 cups leftover chopped turkey
- 1 ½ cups red or green seedless grapes cut in half
- ¼ cup chopped pecans
- 2 medium stalks of celery chopped
- ¼ cup mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon curry powder
- salt and pepper to taste
In a large bowl, mix toegether chopped turkey, grapes, pecans, chopped celery, mayonnaise, lemon juice and curry powder. Mix well then season to taste with salt and pepper.
This is a great use for leftover holiday turkey. Serve on bread for a sandwich, with cracksers or on top of a bed of lettuce. You can also substitute leftover chicken for the turkey.
If you do not like curry powder, feel free to leave it out or substitute a milder spice like sweet paprika.
