Fruit Salsa

Ingredients

  • 1 ½ cups Fresh strawberries hulled and finely diced
  • 1 cup Fresh blueberries
  • 1 cup Seedless grapes red or green, quartered
  • 3 Kiwis peeled and finely diced
  • 1 Large ripe mango peeled, pitted and finely diced
  • 1 tablespoon sugar
  • 1 tablespoon fresh lime juice

Instructions

  • Make sure to dice all fruit into uniform pieces. In a large mixing bowl, combine your finely diced strawberries, kiwis, and mango with the whole blueberries and quartered grapes. Sprinkle 1 tablespoon of granulated sugar and 1 tablespoon of fresh lime juice directly over the fruit mixture.
  • Gently toss the fruit salsa together with a rubber spatula. Cover the bowl and refrigerate for at least 15–20 minutes before serving. This will allow the sugar and juices of the fruit to create a thick syrup. Serve with vanilla wafers, cinnamon sugar chips or as a topping on ice cream, cake or whatever you'd like.

Notes

Substitute any fruit you'd like for this salsa. Just make sure fruit is cut into even size pieces. I like to do seasonal salsa based on what is at the market. 
I prefer this as a dessert salsa, but it is also good on smoky or spicy chicken, meat or seafood.
