Ingredients
½cupchopped onion
½cup chopped celery
½cupchopped carrots
1 tablespoonolive oil
6cupschicken (or turkey) stock or broth
10ouncesfresh or refrigerated cheese tortellini (1 package)
1 ½cupsshredded cooked chicken
1tablespoontomato paste
1 handfulfresh spinach or other herbs or greens, chopped (optional)
Instructions
In a large pot or Dutch oven, saute the onion, celery and carrots in the olive oil on medium heat. Cook for 5 minutes or until the vegetables are softened.
Add broth and bring to a boil on medium high heat. Cook for 5 more minutes. Add tortellini.
Reduce heat to low and simmer for 5 minutes or until tortellini are tender and cooked.
Add tomato paste and chicken to the pot. Stir well and cook for a minute or two. Serve in bowls.
Notes
Frozen or dried tortellini can be used but adjust cooking time to directions on the package. It typically will take about 5 to 10 more minutes to cook.
