Best Oatmeal Recipe with Pears, Figs and Walnuts

- 3 Tablespoons walnuts coarsely chopped
- 3-4 cups water (depending on if you like your oatmeal thick or thin)
- 2 cups quick cooking oats
- 2 Tablespoons butter
- 2 large pears
- 3 Tablespoons brown sugar
- ½ Teaspoon cinnamon plus extra for garnish
- 4 fresh figs chopped
- ¼ cup vanilla Greek yogurt
Stir walnuts in a medium nonstick skillet over medium heat until lightly toasted, about 3 minutes. Remove from heat and set aside.
Bring 3 or more cups of water to boil in a medium saucepan. Add oats and stir over medium heat until oats are softened and very thick, about 1 minute.
In the skillet, melt the butter on medium heat. Toss together pears, sugar and cinnamon. Saute pears for 5 minutes or until softened.
Add the figs and reserved walnuts. Cook for a minute or two and mix to make sure the figs are coated with the syrup from the pears.
Top the oatmeal with the warm pear mixture in individual bowls. Top with the yogurt and sprinkle with cinnamon for garnish.
