Ingredients
2TBSfinely chopped cilantro
2TBSolive oil
1 ½TBSBalsamic vinegar
2teaspoonsugar
2TBSwater
½teaspoonsalt
½teaspoonblack pepper
2 to 3cupsbaby arugula
1medium size tomatochopped
1avocadopeeled, pitted and chopped
2TBSshredded Parmesan cheese
Saltto taste if necessary
Instructions
In a small bowl, whisk together the cilantro, oil, vinegar, sugar, water, salt and pepper. Set aside.
Toss together the arugula, tomato and avocado.
Mix together with dressing.
Top with Parmesan cheese. Season with extra salt if necessary.
Notes
Top it with grilled shrimp or chicken for a great main course.
