Air Fryer Cubed Sweet Potatoes

Ingredients

  • 2 lbs sweet potatoes about 2 large or 3 medium potatoes
  • 1 tablespoon olive oil
  • ½ teaspoon sea salt
  • 1 teaspoon paprika
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder

Instructions

  • Preheat air fryer to 380 degrees. Peel and cut the sweet potatoes into ½ inch cubes with a sharp knife on a cutting board.
  • Place the cubed sweet potatoes in a large bowl and drizzle with olive oil. Sprinkle on the salt, paprika, pepper and garlic powder. Mix together so all pieces are evenly coated.
  • Spread the sweet potato chunks in a single layer in the air fryer basket or rack. Cook for 12 to 14 minutes or until golden brown, turning once halfway through cooking. Sweet potatoes will turn golden brown and you can adjust time on how crispy you like them.
  • Serve hot and season with extra salt and pepper if desired.

Notes

Skin can be left on sweet potatoes, if desired. Just make sure to wash and scrub them well.
(Non Air Fryer) Oven Instructions:
  • Transfer the seasoned sweet potatoes to a large sheet pan lined with parchment paper. 
  • Spread evenly so they do not overlap. Cook for 25-30 minutes in a 400 degree preheated oven. Flip halfway through cooking time for even cooking.
