I love roasted veggies. They are the type of thing you can make once and then use through out the week for different recipes. This past week, I had a roasted veggie omelet, a roasted veggie wrap and my favorite which was this hot roasted veggie hoagie. That's what I call a sandwich that is stuffed and is on a nice Italian roll but you might call it something different. If you can recall, I did a post on different names you can call a sandwich depending on the area you live. What do you call your sandwich?
I had a multitude of cheeses in the fridge so it was a hard decision to decide what kind to put on my hoagie. Yes, if life should be so tough. But I went with Asiago and loved the sharp taste with the sweet carmelized veggies. I am sure any cheese such as Brie, goat cheese, swiss cheese or mozzarella would work. And speaking of cheese I have a little favor to ask of you.
A while back I had posted a picture of a cheese plate I had entered in the Ile de France prettiest platter contest. I was wondering if you could click here and rank my platter if you choose to do so. It is much appreciated and I thank you lots! There is also a link on my side bar. Hope everyone has a great weekend!
Roasted Veggie Hoagie
1 medium eggplant, skinned and chopped in 2 inch pieces
1 medium yellow squash, sliced
10 ounces button mushrooms
1 large red pepper, cored and cut into 2 inch pieces
3 cloves crushed garlic
1 teaspoon dried Italian seasoning
handful fresh basil, chopped
2 TBS olive oil
salt and red pepper to taste
3 to 4 hoagie rolls or nice size pieces of Italian bread (I used multi grain)
cheese to your liking (I used Asiago...about a half cup shredded for each hoagie)
Preheat oven to 400 degrees. In a large bowl mix all the veggies, garlic, Italian seasoning, basil and drizzle with the olive oil. Mix together well and add salt and red pepper according to your taste. Roast the veggies for 40 to 50 minutes or until they are soft and browned. Split the rolls and fill them with the veggie mixture. Top with cheese and put them back in the oven for a few minutes or until cheese is melted.

I'm originally from Philadelphia and it will always be a hoagie to me. This one looks great with all those roasted veggies. Thanks for the idea. I think I will roast a bunch this weekend to eat next week.
veggie subs are my all time favorite. we can't any good ones around here, so I have to always make my own. this one though Lisa is so GOOD.
Growing up in Hunterdon County we called them hoagies. When I moved to Monmouth County as a teenager everyone called them subs. I've pretty much stuck with subs. No matter what you call it - it looks delicious! I love roasted veggies!
I'm just back from voting for your cheese tray. It was and is a lovely display. I also love your vegetarian sub. Will your husband eat roast veggies if you have meat for him or is he a true veg hater?
Looks delicious! I need to get more veggies in me. I should try this idea.
I love this idea of roasting veggies to use for the full week. Such a great way to keep the fun going all week.
This is so what I LOVE!! This kind of hoagie is MY favorite. It looks delicious.

We are big fans of the roasted veggies around here too. I'm lucky that the hubs likes them too
I love veggie sandwiches, as you know:) Love yours!

It looks delicious Lisa. Down here in Virginia sandwiches are called subs but on Long Island where I am originally from we call them heros....
That looks delicious.
i'm just barely starting to realize how good sandwiches can be without any meat at all, this looks just delicious!

I absolutely love roasted veggies! Especially this time of year with all the lovely Autumnal vegetables! I recently did a big tray of roasted butternut squash, carrots, garlic and red onions with sprigs of rosemary and thyme! So good. Lovely blog by the way!
