In our house, clementines are like gold. I can't buy them fast enough. In fact, I buy two boxes or bags at a time. If my windows are open, my neighbors will occasionally hear me scream to my kids and husband, "Don't hog the clementines!" Well guess what? I made the problem worse. Those sweet juicy fruits just became sweeter because I covered them in white chocolate .
All I can say is "Ahhhhhhhhhh!" Think creamsicle. Only better. Juicier. Sweeter. Think heaven. You won't know how good these are until you melt some white chocolate and dip the cute little sections in the creamy goodness. Let them rest on wax paper and refrigerate until the chocolate is hardened. Make sure you use good white chocolate and not the sugary, waxy kind. I tried the Trader Joe's brand which was 45% cocoa butter. It seemed like the chocolate was a bit soupy when melted. But once the chocolate on the clementines hardened in the fridge, they were perfect. Lindt and Ghirardelli are also good brands of white chocolate to use.
Oh. My. Goodness. This is my new favorite food. You think I can buy clementines fast enough in my house now?

Ooo my. I have a bunch of the white chocolate bark to use up. I'll have to see if costco or the store has some clementines in stock, I sure hope so! Wonderful idea.

If you can't find Clementines you can use mandarins or any type of seedless orange.

This is a great idea! One of my twin toddlers has decided she's bored with clementines, so I'll this out. She really needs the fiber and clementines were one of the few fibery things she'd eat!
