Who has the best blueberries? We do! NJ , of course. Yes, I am a little partial because I love to get fresh pints straight from the farms. The season is not very long so I eat as many as I can and then freeze some. The nutritional value is great and blueberries are just bursting with antioxidants.
We've had plenty of blueberry desserts so now I wanted to try a salad. This blueberry slaw combination is awesome. I love the texture of the crunchy slaw, ripe blueberries and chunky almonds. At first, the cheddar cheese might sound a bit weird but trust me and throw some in the bowl. The saltiness of the cheese blends well with the salad. Make this at your next potluck picnic or barbecue and it will be the topic of conversation.

Tangy Blueberry Almond Broccoli Slaw
4 TBS light mayonnaise
4 TBS seasoned rice vinegar
2 TBS sugar
1 (12 oz) bag of broccoli slaw
¾ cup shredded sharp cheddar cheese
¼ cup finely chopped red onion
½ cup toasted slivered almonds
½ cup raisins
1 cup blueberries
salt and pepper to taste

In a small bowl, whisk together the mayonnaise, vinegar and sugar. In a larger bowl, mix together the slaw mix, cheese, onion, almonds, raisins and blueberries. Add salt and pepper to taste. Refrigerate for a few hours to allow flavors to blend. Makes 6 servings.

I went ahead and made this tonight since I had everything in the house and ripe blueberries on the bush outside.
It was fantastic. Tangy and zesty, but delicious. I served it as a side with Blueberry-Beef Burgers-- made for a fun, themey summer meal.

I was actually born in Jersey (although I only lived there until I was 4)and we go back often to visit relatives. I must admit- Jersey does have the best blueberries and corn (so yummy). This recipe sounds totally unique and yummy. I can't get enough broc slaw!
