    Spinach and Provolone Sausage Patties plus a GIVEAWAY!

    Have you ever made homemade sausage? It's much easier than you think. It's also a great way to enjoy a leaner sausage with less sodium and experiment with different flavor combinations.

    Recently the National Pork Board conducted a survey to find out about food trends in America this holiday season. One popular trend is the DIY movement. Many home cooks are feeling empowered to  make things themselves. Americans want to try new flavors, recipes and techniques.  People want to give home cooking another try.

    Pork is always included on our New Year's table. This year, sausage patties will be one of our brunch items. While I WOW my guests with homemade sausage, I will be smiling to myself and thinking about how easy it was to make.

    There is no special equipment needed to make this recipe. I shape the sausage into patties rather than links so I don't even have to worry about purchasing sausage casing. The sausage patties are great for entertaining during the winter holidays but they can also be grilled during the warmer months for an outdoor barbecue. These are perfect served next to sauteed onions and peppers but I like mine on a roll next to a fried egg.

    Homemade Spinach and Provolone Sausage Patties

    1 lb ground pork
    ½ cup loose frozen spinach, defrosted
    ½ cup shredded sharp Provolone cheese
    ½ teaspoon ground sage
    2 teaspoon dried Italian seasoning
    1 teaspoon garlic powder
    1 teaspoon salt
    ½ teaspoon dried fennel
    a pinch of cayenne pepper
    2 TBS canola oil

    Mix all ingredients except the canola oil together in a large bowl. Divide the mixture into 10 even portions and form into patties.  Heat the oil on medium in a large frying pan. Add the sausage patties and cook them for 4 to 5 minutes on each side. They should be nice and brown. Drain any extra grease on paper towels before serving. Makes 10 small patties.

      When I was a little girl my grandmother would make me fried pork chops, mashed potatoes and string beans everytime I visited. Still this is my favorite meal and brings me right back to being a little girl.

      Tough call between pulled pork in the slow cooker or pork tenderloin. I'll go with pork tenderloin as my fave way to do pork...yummy!

      My favorite pork dish??? Has to be the "fake" weiner schnitzel I make my husband, using pork instead of veal. Served with homemade grated potato pancakes and red cabbage.......mmmmmmmmmmmm, almost like being in germany!!!

      I love pork and eat it often. I love to do a Cuban style pork roast, sometimes baby backs in Asian spices & peanut butter on the grill, sometimes a Boston Butt in the oven to make Carolina style pulled pork and sometimes...just a simple pork chop dusted with flour and sauteed.

      I don't know that there's a pork dish I don't like, but I have a Boston Butt rubbed and resting in the fridge waiting to be put on the smoker at 6 a.m. New Year's morn. I don't know of anything better than Eastern North Carolina style pulled pork!

      My favorite is a six hour pork roast recipe from Gourmet magazine 1999. You use a big pork butt, put on the rub the night before and then roast it slowly in a 275 degree oven. The whole house fills with a delicious aroma. It's a great sunday afternoon dish! The meat is oh so tender and the crust is to die for! mliotta56@comcast.net

      Great looking sausage recipe Lisa. We love pork. Hard choice but I think my favorite pork dish would be schnitzel with lemon. Super simple but just the best.
