    Purple Antioxidant Smoothie and NEWS!

    Life has had it's ups and downs lately. I think this is just typical for everyone especially when you have children.  I try to take the good with the bad but like every other mom, sometimes my plate can be very full. Yesterday, I had to take my son to the emergency room and I am thankful he is fine.  He is home from school today with a mild concussion and needs a little extra TLC but he will be back to his normal activities in no time.

    Now that I've gotten rid of the bad news first, it's time to share some GREAT news.  Tomorrow, Wednesday, March 21st I will be on the Dr Oz Show!  It is a cooking related segment and I am as excited as can be.

    With all this happening, I felt the need to make myself a great big drink loaded with antioxidants for breakfast. I love making my own smoothies and this is a great way to get in some extra fruit and veggies. I used buttermilk as the liquid in the smoothie and it worked really well. Buttermilk is low in fat,  but high in potassium, vitamin B12, calcium, and riboflavin. It is also great for the digestive system. I also added blueberries, spinach and bananas. All these things are so good for you. It might sound weird to add spinach but I couldn't even taste it. The drink had a sweet, tangy flavor.

    One thing I should mention. This smoothie is a nice purple color but if you let it sit out too long, it turns to a not- so- nice color. This doesn't bother me but if you are making it for someone, you probably would want to serve it right away.

    Yes, I have jumped on the smoothie bandwagon. There will be more to come. What's your favorite smoothie?

    Purple Antioxidant Smoothie

    A purple smoothie filled with antioxidants.
    Servings: 2 to 3

    Ingredients

    • 1 ½ cups low fat buttermilk
    • 1 cup blueberries
    • 1 ½ cups baby spinach
    • 1 large or two small bananas sliced and frozen

    Instructions

    • Put all ingredients in blender and process until smooth. Serve immediately.

      Try using Coconut water instead of the buttermilk. Also, you can throw in a little fresh coconut and mango. Yummy! 🙂

      That looks & sounds really good. I am big on making smoothies for breakfast. I usually can't eat when I first wake up, but I need a hit of energy with 3 boys, so smoothies are a great kick start in the morning!

      What a wonderful smoothie...I love the combination of blueberries and bananas. And I'm bummed I missed you on Dr. Oz. I know my TV was on the right channel...I just wasn't paying attention ...rats.

      I had to let you know that I did see you on Dr. Oz and I thought you were wonderful! You didn't act at all nervous, and the dish you prepared sounded fantastic. Congrats!
