I am a little behind in my Barefoot Bloggers post but better late then never, right? This month's recipe was chosen by Natalie of Burned Bits. I wasn't thrilled to make this but was pleasantly surprised at dinner time. My husband loved it. It was a very comforting soup and very satisfying on a somewhat cold day. I made some changes from the original version but if you'd like to see Ina Garten's version, click here.
I went with a little lighter version and chose not to add the pancetta. I cut down on the oil and added some mushrooms instead of the carrots and fennel. I will be making it again. I am also curious as to how the leftovers will taste tomorrow.
Pappa Al Pomodoro
2 TBS olive oil
1 medium onion, finely chopped
8 ounces sliced mushrooms, chopped
2 cloves garlic, minced
1 ยฝ cups diced ciabatta bread
28 ounce can diced tomatoes
2 cups chicken stock
ยผ cup red wine
ยฝ cup chopped basil leaves
salt and pepper to taste
ยผ cup Parmesan cheese
garnish:
1 ยฝ cups cubed bread
drizzle of olive oil
ยฝ teaspoon garlic powder
grated asiago cheese
fresh basil leaves
Heat oil in a large soup pot and saute onions, mushrooms and garlic until wilted. Add bread cubes and cook for 5 more minutes. Add tomatoes, stock, red wine and basil. Simmer for 3o minutes and use hand blender to process soup until smooth. Add salt and pepper to taste. Mix in Parmesan cheese. While soup is simmering, drizzle the bread cubes with olive oil and garlic powder and toast in a 375 degree preheated oven. Serve the soup with the toasted bread cubes, grated asiago cheese and garnish with basil. Makes 4 servings.
