This morning I woke up from another food coma. There has been good holiday eats around here causing various members of my family to sleep late and stay in their pajamas until 2pm for the last three days. One of those people may or may not have been me.
There is more celebrating to be done and plenty of good food to be had before the new year begins. The problem is if I keep eating lasagna, cookies and rib roast, I will be looking a little bit like the big man in the red suit. While I just can't just start my full healthy regiment yet, I can make a few lightened up appetizers for my next gathering. If I take a quick trip to the gym or get in a slow jog around the block, I'll feel much better too.
It's not hard to have some healthy munchies on your table. I'll start my new year's eve celebration with my lightened up smoked salmon appetizer made with Wasa crispbreads. I love Wasa crackers because they are delicious and made with whole grains. The crisp and light 7 grain crackerbreads have 70 calories in three huge crackers. Lightened Up Smoked Salmon Appetizer
- 4 ounces light cream cheese room temperature
- 12 Wasa Crisp n Light crackers broken or cut in half
- 24 slices cucumber very thinly sliced
- 4 ounces thinly sliced smoked salmon cut into 24 pieces
- dried dill or fresh chopped dill for garnish
- Spread the cream cheese on each cracker.
- Top each with a slice of salmon.
- Garnish with the dill.
