I had meant to put up a post yesterday but a few St Patty's Day drinks got in the way. I hope everyone had a good one with luck going their way!
We started the day out with those pesky leprechauns visiting while we were sleeping. They did their usual trick of dumping my basket of food magazines and messing up the living room. My kids set some traps but the leprechauns didn't go for them and we couldn't catch them.They did leave some gold chocolate coins so the kids were happy.
My son came home from school yesterday with a treat of Irish potatoes that his wonderful teachers had made with the class. They were so good I thought I should share this classic recipe with with you. You don't have to wait until next St Patty's Day to make them. They are good any time of year!
Here are my two hams all ready to go to school yesterday. Happy Friday!
¼ lb butter, softened
8 oz cream cheese, softened
2 lb powdered sugar
3 teaspoon vanilla
7 oz coconut
cinnamon
Mix all ingredients together. Make sure mixture is well blended. Roll into balls and then roll into cinnamon. Keep leftovers refrigerated.

I remember making these when I was younger. So funny, my friend at work had to do something for the leprechauns too! I never remember getting anything but I like the idea of chocolate coins, very cute 🙂
