Feta Cheese Dip is a great alternative to a high calorie finger food. Serve it with veggies and/ or tortilla chips for a gluten free appetizer.
Yesterday I went shopping for some new jeans. I decided to try on a pair of skinny jeans. Well guess what? They didn't look so skinny on me.
Surprise, surprise!
It could be the fact that I went holiday grocery shopping and I feel the need to keep massive amounts of cheese in my refrigerator in case anyone stops over. At last count, it was seven pounds to be exact. Pair that with several bottles of wine and assorted crackers in my pantry and you can have a party anytime. But you can also have a few too many late night snacks while watching reruns of Modern Family.
So I need a solution to my cheese dilemma. Well first, I can make sure I work out more and eat a healthy omelet for breakfast. Secondly, I need a cheese appetizer that is easier on my hips than my Easy Pimento Cheese Recipe. I decided to make this lighter feta cheese dip and eat it in moderation with plenty of veggies.
This is great for a party or football watching. I am not sure if it will get me into skinny jeans anytime soon but it sure tastes good and anything with feta in it is great in my book. I also love to snack on these Greek Shrimp Skewers that also contain feta and are a lighter style appetizer.
This recipe is so simple to make and really only has to be mixed together. You can whip it together in a blender or food processor if you like it extra creamy but I like the chunky texture so I mix it up in a bowl. You can always make your own roasted red peppers but jarred ones are fine in my book.
Just make sure to let the feta cheese dip sit in the refrigerator for at least an hour to have the flavors blended together. Actually the longer it sits in the fridge, the better! It is a great appetizer to make the night before and take to a party the next day.
Feta Cheese Dip with Red Peppers
Ingredients
- ½ cup light crumbled feta cheese
- ¾ cup light sour cream
- ¼ cup roasted red peppers chopped
- juice from half a lemon
- ½ tsp garlic powder
- 1 tsp dried dill
Instructions
- Mix all ingredients in a bowl.
- Refrigerate for at least an hour to blend flavors.
- Serve with pita chips or veggies.
