When you don't have a kitchen, dinner time can be a little bit of a challenge. Several years ago we had our kitchen redone so rotisserie chicken was on our dinner table often. I ran to the grocery store at least once a week and bought a rotisserie chicken along with a few side dishes.
If you need a semi take out meal, this is a great option for $10! I picked up the chicken along with a can of baked beans and a light bagged Caesar salad. Dinner is ready in five minutes and it is much better for you than fast food.
Now I have a kitchen and I am still buying rotisserie chicken. You can make so many creative recipes that start with a rotisserie chicken. Here are 10 terrific recipes where dinner will never get boring:

I know, it is such a pain to not have a working kitchen...hopefully they are making good progress and you will be able to get back in there soon. In the meantime, those are great recipes you can use! I am going to tuck them away as well because they will be great for some of the very busy evenings we have! Have a great 4th of July!
