Fall Favorite Dinners

The weather has gotten a bit cooler and I love serving a warm comforting dinner. Root veggies and autumn squash are perfect to incorporate into family meals. Take a look at a few of my favorites. Just click on the photo to take you to the recipe.

Red Wine Goulash via Food Fanatic

Mmmmnn, goulash. I remember being a child and my mom making this because my dad loved it. This goulash has a red wine gravy and I especially like egg noodles served with it.

Squash Gnocchi with Sage Butter

Melt in your mouth gnocchi made with squash and finished with sage butter. This is vegetarian comfort food.

Pulled Pork Stuffed Sweet Potato by Souffle Bombay

A sweet potato stuffed with pulled pork. How convenient is that? It’s a whole meal in a potato!

Roasted Pork Tenderloin with Delicata Squash Medley

Pork and delicata squash just remind me of fall. Add some potatoes and green beans. I love this meal which gets roasted all in one pan.

One Skillet Poblano Chili Mac

This is a favorite among kids and adults. It’s like chili mac but just a little more sophisticated. Not too spicy but it has the perfect amount of heat for a chili evening.

Fall weather is the best! There are so many good veggies that I have been getting from my CSA farm and incorporating them into my meals. What’s your favorite fall dinner?
