Bits and Bites

I am still without a kitchen but things are really coming along. The recessed lighting and hardwood floors are done. Tomorrow they will start delivering our cabinets and I am really excited.  In just a few more weeks, I will be cooking away in my new kitchen.

In order to keep the little love handles going, you have to eat, right? Yes, we’ve been doing lots  in some great local restaurants. But sometimes I want a quick easy meal that I can microwave. I am not much of a microwave meal person but I tried some meals from Lyfe Kitchen and  they were good. I loved the fact that they are made with top quality ingredients, no preservatives and are lower in salt.

They were created by Oprah’s chef Art Smith and former Whole Foods chef John Mitchell. Lyfe Kitchen microwavable meals can be bought at grocery stores around the country. We tried several meals and one of my daughter’s favorites was the whole grain penne pasta with turkey meatballs.  I love that these meals can be made when I don’t have time to cook. My family still feels like they are eating a decent dinner and all I do is microwave them in the environment friendly pouch.

It was good to have some healthy meals because I haven’t been eating too healthy lately. Bakery sweets have been included in my diet a little too much but it’s summer time and you need to live a little. There is a good bakery Sweet Eats in Voorhees, NJ.  The red velvet cupcakes are my favorite. I get extra brownie points (or should I say cupcake points?) from my kids when I bring home treats from there.

Speaking of bakeries, have you ever had a cream doughnut from McMillan’s Bakery? These are the best! They should probably come with a defibrillator  as the light airy cream is loaded with sugar and shortening but tastes wonderful.

They are covered in powdered sugar. So much powdered sugar is on them that I made my son eat it in the back yard. He was one happy boy anyway. The fluffy cream along with the crispy light cake will make anyone smile.

Last but not least, we had a wonderful dinner at Catelli Duo. I love their menu which is contemporary Italian.  One of their appetizers is their signature house meatball. Did you ever see a meatball so big? It is stuffed with Scamorza cheese and topped with sauce and ricotta. It is enough to share with a few people but I could probably eat the whole thing myself.

meatball Catelli Duo The other thing that was memorable was their short rib pizza. Imagine slow cooked short ribs, Yukon gold potatoes and Fontina cheese all on a crispy crust. So yummy!  And yes, I will be back at Catelli Duo for more before my kitchen is done.

This is what I have eaten lately. I will have more bits and bites for you before my kitchen is completed. We still have lots of eating out to do!

That is one big meatball! I know the hubby would eat the whole thing.

Oh my gosh, I have to tell myself baked goods taste bad. No matter how good they look, awful…..right….I won’t enjoy them.

I will have to look for those Lyfe, the WW penne has me interested.

I bet you are so excited for your kitchen to be finished! That meatball is HUGE and the pizza looks mighty tasty too.

I love microwave cooking – it’s so easy! I’m sure you can’t wait though to get your kitchen back together. I think I’d have to light up the grill and keep it on until I got my stove back.

Glad to hear the kitchen is coming along. I love Sweet Eats but have never tried McMillan’s. I will have to get over there soon! That meatball from Catelli Duo looks amazing! That is right around the corner from me…I will have to get over there soon, too, and try that giant meatball!
