Did you know that April 3rd is  Whole Grain Sampling Day? All across the world, people will be eating healthy whole grains. Oldways  and  The Whole Grain Council started this initiative  last year to get more consumers to be aware of the health benefits of whole grains along with the fact that they taste great. This year, a virtual toast will be going on at 12 noon. Check out Twitter and Facebook to see how many people will be making this toast.

I love the nutty flavors that whole grains provide. To me it makes food much more interesting. Whole grains are also loaded with all kinds of nutrients such as B vitamins, vitamin C, folate and fiber.  Eating 2.5 servings a day can lower your risk of cardiovascular disease by almost one quarter.

Since I love whole grains, I was selected to be an ambassador for this special event.  I received a huge box of all kinds of samples to try. I have always been an advocate of eating healthy food which includes lots of whole grains in my family’s diet. But I received some new things to try which were even new to this healthy cooking mom. The best part is that The Whole Grains Council has allowed me to give one of these great boxes to one of my lucky readers. This is what the box includes:

I always try to  incorporate whole grains into my kids diet. It seems lately my two kids do not always want to eat breakfast.  I tend to make muffins so they are easy to eat and they are good for the road. My teenage daughter grabs one and eats it while waiting for the bus. I used whole wheat flour, oats and bananas as I think these ingredients are great for a breakfast muffin. Maple syrup is used as the sweetener to give the muffins a subtle sweetness. Of course chocolate chips were added to make these more appealing to kids and chocolate makes everything better!

Make sure to have some whole grains added to your diet. And don’t forget to toast  at 12noon on April 3rd!

Chocolate Chip Banana Breakfast Muffins

A healthier muffin recipe perfect for breakfast.
Ingredients
  • 1 large ripe banana, mashed
  • ¼ cup maple syrup
  • 1 large egg, beaten
  • 3 TBS canola oil
  • ¼ cup light sour cream
  • ¾ cup whole wheat flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ cup old fashioned oats
  • ¼ cup plus 1 TBS mini chocolate chips, divided
Instructions
  1. Preheat oven to 375. Use muffin liners to line 8 muffin cups.
  2. Mix first five ingredients (banana through sour cream) together in a large bowl.
  3. In a small bowl, mix together the flour, baking powder, salt and oats. Add to the wet ingredients and mix until combined.
  4. Lightly mix in ¼ cup of chocolate chips.
  5. Portion batter into 8 muffins in prepared pan.
  6. Sprinkle remaining chocolate chips on top of muffin batter.
  7. Bake 18-20 minutes, until golden and a toothpick stuck in one comes out clean!
