The Hoity Toity Egg McMuffin

I love cooking breakfast however time is usually limited in the morning. On a rare occasion, today I served something other than a bowl of cereal or yogurt for breakfast. So I would like to introduce to you a non-kid friendly egg McMuffin. Let me warn you that most kids will not want this for breakfast but the adults will love it. After making this, you will always keep truffle cheese and oil in your house. It is that good! You can get both truffle oil and truffle cheese at Whole Foods, Trader Joe’s or an Italian specialty store.

I know the ingredients sound fancy but once you get them, the recipe is very easy. And if you are on a low carb diet, skip the muffin and just eat the omelet. The best part is that the kids won’t ask you for a bite. You can get them their own from McDonalds!

The Hoity Toity Egg McMuffin

1 tsp olive oil
2 slices Rosemary ham, chopped
cooking spray
2 eggs
1 TBS water
salt and pepper to taste
1/2 cup shredded Italian truffle cheese
2 English muffins, sliced in half
1 TBS softened butter
a drizzle of truffle oil
In a small nonstick omelet pan, heat the oil on medium and saute the ham until it starts to brown (about 3 minutes). Remove ham from the pan and set aside on a plate. Use a fork to beat the eggs and water in a small bowl. Spray the pan with cooking spray and pour the egg mixture and give it a good swirl so that they spread out thinly across the entire pan. Sprinkle the eggs with salt and pepper and let them set, this happens quickly depending on the heat of your pan (about one minute). Add the ham to one half of the omelet and top with 1/2 the cheese. Run a spatula underneath the omelet and turn over half to cover the filling. Cook on low for another minute or two or until cheese is melted. Top with remaining cheese and cover for 30 seconds or until cheese melts. Cut the omelet in half and keep warm. Toast and butter the English muffins. Add omelet to each muffin half and drizzle with a few drops of truffle oil. Cover with other muffin half.
