Happy new year to all! To celebrate the new year, I made some Bellinis with Prosecco last night. I liked them so much that they just might be my new winter drink. In case you’ve never had one, a Bellini is a cocktail that originated in Venice. It typically is made of sparkling wine and peach puree. It is one of Italy’s most popular cocktails. I am happily sipping on one as I speak (or write). If you would like a non alcoholic version, you can use sparkling cider instead of the Prosecco. I made this version for the kiddos and it tasted pretty good.

Prosecco (dry Italian sparkling wine)
Take a tall champagne flute and squeeze a small slice of lemon into the bottom of the glass. Add a few pomegranate seeds and a splash of pomegranate juice. Fill the glass with Prosecco and it is ready to drink!
