A Lemon Pomegranate Bellini to Ring in the New Year!

Happy new year to all! To celebrate the new year, I made some Bellinis with Prosecco last night. I liked them so much that they just might be my new winter drink. In case you’ve never had one, a Bellini is a cocktail that originated in Venice. It typically is made of sparkling wine and peach puree. It is one of Italy’s most popular cocktails. I am happily sipping on one as I speak (or write). If you would like a non alcoholic version, you can use sparkling cider instead of the Prosecco. I made this version for the kiddos and it tasted pretty good.

Lemon Pomegranate Bellini

one champagne flute
a slice of lemon
pomegranate seeds
pomegranate juice
Prosecco (dry Italian sparkling wine)

Take a tall champagne flute and squeeze a small slice of lemon into the bottom of the glass. Add a few pomegranate seeds and a splash of pomegranate juice. Fill the glass with Prosecco and it is ready to drink!

I like peach bellini a lot but I'm sure I will like this one too because I love pomegranates.

I have a girlfriend who always serves Prosecco when we come to her house for Bookclub. I love it, and this version sounds delicious, too!

We did flavored champagnes this New Years – almond, orange, and raspberry. I can only imagine how amazing a bellini with one of them would have tasted, but we didn't have any left over by the end of the night!

Happy New Year Lisa! I was first introduced to proseco from my MIL the day of my wedding when the "gals" had a drink before I got hitched – not my cup of tea, but it does look pretty! 😀

Looks so crisp and refreshing, and I've been searching about for something to do with Pomegranate juice other than create a smoothie. Happy new year!
