Halloween Candy Cookies

Yes, Halloween has come and gone but the candy still lingers! My two children were very ambitious trick or treaters this year and collected just over twelve pounds of the stuff. This is the official amount as they weighed it on our scale. We all love candy however, enough is enough. I secretly stuck some in the freezer, we gave some away and we hungrily devoured much of it in the days following Halloween. But we still have piles left. So I made some cookies to disguise the candy. I took a basic recipe for
Hershey Toffee Bit Cookies and substituted chopped candy for the toffee bits. My eight year old son helped me make them and they were a hit. We even shared them with friends. You could use your favorite chocolate chip or sugar cookie recipe too. Now does anyone have a savory recipe where I could use up our Halloween candy?



Halloween Candy Cookies (Adapted from Hershey’s Toffee Bits Cookies)
2-1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
1 teaspoon vanilla extract
2 eggs
1 1/2 cups chopped Halloween candy
Heat oven to 350°F. Lightly grease cookie sheet or line with parchment paper. Stir together flour, baking soda and salt; set aside. Beat butter, granulated sugar, brown sugar and vanilla in a large bowl until well blended. Add eggs; beat well. Gradually add flour mixture, beating until well blended. Stir in candy. Drop by rounded teaspoons onto prepared cookie sheet. Bake 9 to 11 minutes or until lightly browned. Cool slightly; remove from cookie sheet to wire rack. Cool completely. Makes about 4 dozen cookies.

What a great way to use up leftover candy. I think the candy tastes even better in cookies.
