Mandarin Orange and Pecan Spinach Salad

I’ll admit I have been a lazy blogger lately. It’s been a week since my last post and I’ll admit I have been doing more eating than posting. Last week, I was lucky enough to get the opportunity to review the new Seasons 52 that opened up in Cherry Hill. If you would like to hear about my experience, please read about it on Jersey Bites. I also met a bunch of Jersey bloggers for an Indian grocery tour and lunch at an Indian restaurant this past weekend. I will tell you more about that in my next post.

Today, I have a nice spring salad for you. The weather is finally warm and as soon as I finish my post I am going for a walk. The wonderful folks at the Green Valley Pecan Company sent me some delicious pecans to try and I decided to use them in this salad. I also used some of Trader Joe’s poppy seed dressing which has the perfect amount of tangyness and sweetness. I toasted the pecans to bring out the flavor and crunchiness. In order not to heat up my whole house with the oven, I toasted them lightly in a frying pan. See these beauties. They also gave the salad a nice crunchiness.

I am so excited as I just booked a family trip to NYC. We will be going for a long weekend and staying in midtown so I welcome any restaurant suggestions that you might have. We are hoping to get some good pizza and maybe eat at a few casual ethnic restaurants. Time for my walk!

Mandarin Orange and Pecan Spinach Salad

1 (6 oz) bag baby spinach

1/2 cup toasted pecans,

1 cup canned mandarin oranges, drained

1/2 cup poppy seed dressing

Toss all ingredients together in a big salad bowl. Enjoy

I have been lazy too! I can’t wait to hear about the Indian grocery trip. I love Indian food but am intimidated to cook bc of some of the ingredients!

This is one of my favorite salads. My husband thinks it’s “ladies food”. He doesn’t like fruit in his salad. Crazy!

Oh Lisa, this salad looks so delicious and refreshing!!

I LOVE Seasons 52!! They opened the first one down here a couple of years ago and I was so impressed by it! We love sitting in the bar area and listening to the piano guy while eating their yummy HEALTHY food!! That’s so cool that the Jersey bloggers get together!!

I have a similar recipe, but mine calls for toasted almonds and a dressing made from oil, sugar and some hot sauce. Sounds yummy!

I love mandarin oranges in my salad. I just never seem to remember to add them. thanks for the reminder I will add some to tonights dinner.
