Winterized Blueberry Syrup and some MEMEs

A while back, I borrowed a pancake recipe from Prudy Pennywise. It made the most delicious, fluffy, buttermilk pancakes. For the recipe, click HERE. I wanted to experiment with the topping so I made some blueberry syrup. I won some products from Just Tomatoes and this was the perfect opportunity to use their dried fruit. You can choose any of the fruits they have and this is the perfect alternative if it is not fresh fruit season.

Blueberry Syrup

1/2 cup maple syrup
1/2 cup freeze dried blueberries (or other dried fruit)

Put syrup and blueberries in a small pan. Heat on medium until syrup comes to a boil. Reduce heat to low and simmer for a few minutes until syrup starts to thicken.

Nice and easy syrup recipe, Lisa. It’s a good thing to have some frozen blueberries from the summer now, huh? 🙂

I worked at Burger King too, but they found out I was not of age and fired me! Oh well, I can dream can’t I? I was a counter girl and gave all my friends on the football team free food!

I’ve used frozen fruit before, but I’ve never thought of using dried fruit!

Blueberry syrup sounds so good!I love maple syrup, the maple flavor itself is wintry to me. I love this idea, since blueberries are so healthy, it lends to a great excuse to eat more pancakes 🙂
